Garden Jewels

Canning season has begun, and so far I've done tons of beans (well, I actually just blanch and freeze them), peas, beets, and salsa. Peter had fun helping me pull the beets out of the ground (I made sure to do this while Breanna was asleep, or there wouldn't have been anything left in the ground later. Breanna simply loves beets. She'll eat about 2 cups of beets all by herself.) Peter's favorite was the "Monster Beet".Usually I grow several Roma tomato bushes, but this year we added some sort of yellow pear-type tomato. It's very sweet, and is great in salads. Then, of course, some tomatoes re-seed themselves, so we got a nice cherry tomato bush without asking for it.There are lots of peppers and herbs in my garden. In the pot right now are jalapeno, habanero, banana, and serrano peppers, and rosemary, basil, and mint herbs. I used all of them in the salsa batch, which came out my best yet. I'm just "okay" at salsa, but I have yet to hit "true greatness". This year, however, while not yet attaining "true greatness" status, I did manage to reach "quite good" status. Woo hoo for me!

You're amazing, I loooove fresh veggies!!! My BIL is an amazing gardener too. We get fresh tomatoes from them every year, and I eat them until I could turn into a tomato, LOL:) My almost 9 yr old son loves beets too, I hate them! My hubby loves 'em too. They look gorgeous in the jars that way, just like jewels. Your salsa sounds divine as well, yummmmmmmm......

WOW. Looks great! We are only just now starting to harvest some of our Romas. Our peppers (that did AWESOME last year) didn't do so well this year. -Bummer. We only made sauces last year, but I'm going to attempt salsa this year. -Do you have a recipe worth sharing?? :) I'm still looking for one that sounds GREAT. I've been canning pickles... have a batch of gherkins I'm working on right now and I've made 2 batches of bread and butter. I have PLENTY of dill left from last summer. I wish you all the best in your canning/harvesting efforts! Enjoy all of your fresh veggies.
